Vietnamese broken rice with Grilled Pork Chop

“Hey you, i really miss cơm tấm Saigon” – My Hanoi friend told me that days ago, i took her to go to eat cơm tấm at the last day she was in saigon, and she still told me how much she liked it now.

Vietnamese broken rice (Cơm Tấm) is a very traditional and famous dish in Vietnam, especial in Saigon. Broken rice (Cơm tấm) is a dish that was historically eaten by rice farmers who couldn’t sell off their leftover broken rice grains. Instead,they would use it for themselves. and now this type of rice become very famous. You can serve broken rice with anything you like, but in here, normally, it will be served with grilled pork chops (sườn), shredded pork skin (bì) ,sunny side up egg (trứng), steamed pork and egg patty (chả), fish sauce, sliced cucumbers/tomato.

Lots of serving suggestions hei? to make all things suggestions for, it will take a lot of time, so that, I am happy with my homemade cơm tấm today, very simple, very easy, take a short time but very deliscious! The softer texture of broken rice, which soaks up all the wonderful flavours of the marinated pork chops, deef fry sping onion and tangy fish sauce. oh very delish!

So, Here is my recipe

Marinate Pork chops

  • 600 grams pork chops ( 1 cm thickness)
  • 1 tablespoon honey
  • 1 tablespoon condensed milk
  • 1 tablespoon seasoning powder ( you can use 1 tablespoon thick soysauce if you dont have seasoning powder, but, no Salt instead of, as salt will make the meat dry out)
  • 1 tablespoon thick soy sauce ( thicker than the regurlar soysauce, very nice dark caramelized color)
  • 1/2 tablespoon seasame oil
  • 1 tablespoon oyster oil
  • 1 tablespoon canola oil
  • 3/4 tablespoon vinegar (i used apple cider vinegar)
  • 1 1/2 tablespoon granulated sugar
  • 1/2 teaspoon chinese five spices poder
  • 1/2 teaspoon pepper
  • 25 grams shallot, make into paste (u can check this DIY garlic paste)

Marinate the pork chops with all the marinating ingredients, cover with plastic wraps and put in the fridge for at least 6 hours to overnight.

After 6 hrs marinating, take the porkchops out of the fridge and let it s back to room temperature for 1 hour

Grill/ bake the pork chops by BBQ grill or oven

Oven method:

  1. Cook in microwave for 2 minute, power: high
  2. Preheat oven to 180°C.
  3. Grill/broil the pork for 10 mins.
  4. Turn over and grill/broil for another 10 mins.
  5. Depending on the thickness of the pork chop, you may need to grill it 5-7 mins longer. But if you grill it too long, the meat will get too dry. So watch closely and set an alarm clock!

Traditional way, the pork chops will taste most delicious!

Cook Broken rice

If you have the rice cooker,use equal proportions of rice and water. example: if you want to cook two cups of rice, you use two cups of water, shut the lid down on it, push the button and dont worry about it anylonger (1 cup of rice is enough for 2)

If you use the pressure cooker, the direction is same way with using rice cooker (water, rice), put the rinsed rice and water in, cook for only 10 minutes, remove the lid carefulll, give it a stir, lid on again, cook for 7 minutes more, dont walk away or you have to eat only pork chops. :P

If you are cooking on the stove top,the direction is same way with using rice cooker (water, rice). Put the rinsed rice and water in. Bring to a boil, give it a nice stir, clap a tight lid down on it, turn the heat down to the lowest setting possible setting and cook for 15-20 minutes. Let it sit for five minutes off heat, then fluff with a fork.

Deep fried Spring onion

100grams spring onion, finely chop

Heat up 3 table spoon of canola oil over medium high heat, turn off the heat,add chopped spring onion in stir well.

Sweet and sour fish sauce

1 cup fish sauce
1 1/4 cup granulate sugar
1 1/4 cup water
Mix all ingredients until the sugar is dissolved… cook the mixture over highheat, when it’s boiled, turn to low heat and let the fish sauce simmer and reduce to 3/4
squeeze lemon juice/ vinegar to taste, 1 teaspoon minced garlic

Note: dont add so much lemon juice/vinegar, as the fish sauce for cơm tấm is often sweet, not so much sour.

Add a bit of chilli for a spicy taste

How to serve

Sliced cucumbers/tomato for garnish

Arrange everything you’ve made above onto plate and enjoy!

Note:

Feel free to use normal jasmine rice instead of broken rice if you cant find in the supermarket

The key marinating ingredients make the meat very tender: oyster sauce, vinegar, soysauce, canola oil, try hard to find enough these ingedients to make sure u had a great result.

If you can’t find the thick soysauce, use the regular soysauce, but remember that the thick soysauce is often more salty and bit sweet taste included, so let add more the soysauce and sugar amount to your taste)

Baste the meat with marinating sauce/ canola oil very often when grilling or baking.
