Low sugar caramelized apple crumble

As always, I never like too sweet and too fat desert, first of all reason is Heath, but the as important as health is weight! :))

So that, My apple cumble will be just like what i want too, enough sweet to balance with the vanilla ice cream on top, bit nutty of toasted almond, sticky caramel around the apple ( i dont like too runny apple filling which i had often at restaurant), buttery flavor. oh they are just gorgeous! and well, i promise that you wont feel guilty if you eat the 2nd after the 1st delish one! 😛

So here is my recipe

The crumble mixture

  • 35 grams all purposed flour (about 8 tbs), sift
  • 17 grams cold butter ( cut into very small cube)
  • Pinch of nutmeg (optional)
  • 1 1/4 Tbs brown sugar
  • 2 tbs sliced almond
  • Pinch of salt

Use fork, pastry masher or fingers ( or a food processor if you want to wash more stuff for this tiny tweeny amout :P) to mash the flour+nutmeg+salt with the tiny cube butter until the flour crumble like breadcrumb, er, a liltle bit bigger than breadcrumb actually as you will love some little lumps of butter to remain ! 😀

Toss in 2 1/2 tbsp dark brown sugar and 4 tbsp crumbled walnuts. Mix and toss them really well. Refrigerate this crumble topping for about 10 minutes if you’ve got the time.

The filling

  • 450grams apple ( i used Gala, they are natural sweet so i just use a lil bit sugar for the sticky caramel), cut into small cube, or whatever size you want!
  • 2 Tbs brown sugar
  • 10grams butter
  • 2 tbs rum
  • 10 grams cornstarch
  • 3 pinches of cinamon
  • pinch of salt

In a heavy sauce pan over low heat, melt the butter, sugar, salt and Rum, when the sugar is melted, add apple and cinamon in, turn the heat to medium, let it cook for about 5 minute until u see the cramelized sauce is thicker (but not too thick, also,we still have about 30 minutes cooking apple in the oven, so i dont want them cook so long until soft) Turn off the heat, spinkle cornstarch on ( i said sprinkle, dont put 10 grams cornstarch in the same time as the apple is still very hot, it will make the cornstarch to be lumps)

Make apple crumble

Transfer the caramelized apple ceramic ovenproof dishes or ramekin and top with the crumble u just get out of the fridge.

Pop on the top rack of your preheated 190C oven for 30 minutes (check at 20 minutes if using ramekins) or until the topping is golden brown.

Serve with vanilla ice cream or pastry cream.


With the cumble: Just add sugar after u finished mashing the flour and butter, as if u add the sugar in, the butter will be melted so quickly!

Just add a thin crumble layer on top with the apple, as the crumble will be just crispy on top, the rest wont be and become lil bit soggy!
